Natural β-Carotene
β-Carotene is a liposoluble carotenoid widely found in nature. It is composed of two β-ionone rings linked by a long-conjugated polyene chain. The all-trans form is predominant, containing 11 conjugated double bonds. It is a typical liposoluble tetraterpene pigment. β-carotene is used as a nutritional fortifier, edible orange pigment and food coloring agent.
